The Mediterranean Kitchen classes have always been a staple with us, but we have started to offer classes from other areas in Europe – France , Mexico, USA and Germany this time. Classic cooking techniques are the backbone of European cuisine.

Antipasto with Portobello Mushrooms, Tomatoes, Chickpeas, Basil & Balsamic Vinaigrette; Bread Macaroni with Beef & Pork Bolognaise; Fried Pasta Wedges with Roasted Vegetables & Parmigiana Cheese; Individual Zuppa Inglese for dessert

Things you need to know:

​• All class reservations are held with a credit card. No exceptions, sorry. You may pay cash upon arrival for the class if you do not want to use your credit card. Advise us of this decision. If you do not show up for class, your credit card will be charged the full amount. Cancellations must be received one week in advance to ensure a refund.

• A minimum of 6 students is required for each class. If the student count is less than 6, the class may be canceled 

• Most classes last 2 1/2—3 hours, but could be longer. Stay on task.

• Classes begin promptly at the indicated time. We don’t wait. There is too much to do.

• All equipment is provided for you including aprons. You will be advised if you must provide something in advance of the class. Bring baggies or containers to take your goodies home with you should there be any.

• Feel free to bring a bottle of wine to the Mediterranean Kitchen or American Regional Cooking classes. We provide bottled water only. If you contact us, we will give you wine suggestions from the region of study that will pair with your meal.

Baking & Pastry

Basic Bread Baking ….. $25
Do you like fresh bread? Understanding what makes a good loaf of bread will help you want to make bread every week. Learn about the science while enjoying the making, shaping and baking of demi baguettes. While we wait for the 1st rise, we’ll practice making fancy dinner rolls.

Hearty Fall Breads ….. $30
In the Fall, we want breads that make us feel warm and toasty, so we will make Oatmeal Maple Rounds and Sweet Potato bread. Class takes about 4 hours – pesky breads.

Ciabatta – an Italian Bread …. .$30
One of the beat known Italian breads in the USA. Tonight we will make the “little slipper”. You will learn how to use a couche and paddle. Learn about biga and why it is important. But best of all – you get to go home with warm ciabatta.

Frangipane Tartlets with Pate Sucree, Almond Cornets using Puff Pastry, and Eclairs made from Pate au Choux

Paté au Choux ….. $30
This is a cooked and then baked pastry that makes elegant desserts. We will make éclairs and cream puffs. Plus Vanilla Pastry Cream and Chocolate Ganache

Cannoli Cake ….. $35  - Just 3 seats left
This treat seems to have originated in the Napoli region of Italy. It takes patience and time to get it right, but well worth the effort. It has everything we love about cannoli – cheese, chocolate, orange, - all packaged within a white cake that is glazed. Honest, well worth the effort.

Kids  Classes!

Halloween Cookies ….. $20
(6-12years with an adult )
Ghosts, Spiders, Candy Corn and scary things. This is a decorating class using royal icing and candies. Prebaked cookies and icing will be ready.
Saturday, October 27th at 10:00am

Halloween Cupcakes ….. $20
Ages 8-12 with an adult
We will be frosting pre-baked cupcakes in the holiday theme with ghosts, graveyards, black cats and more
Sunday, October 28th at 1:00pm

Class schedules are subject to change, but we try not to let that happen. New classes may be added at any time, so keep a sharp eye out for updates.

Decorated Cookie Skills… $30
A few seats left
This class is designed for the artist in you and it takes a little patience to work with the different techniques . Lots of drying time required to get the best effect. We will use prebaked cookies to save time. Techniques to practice will be: Outlining, Flooding, Marbling, Flocking, and quilting with Royal Icing. Please allow time.

If you sign up, show up - or find a friend to fill your seat! Cookie classes are VERY expensive to produce.
