Tastes of the World
The Mediterranean Kitchen classes have always been a staple with us, but we have started to offer classes from other areas in Europe – France , Mexico, USA and Germany this time. Classic cooking techniques are the backbone of European cuisine. 

Tour of Italy #1 ….. $45   
This will be a favorite. Chicken Milanese with Sage Butter Sauce, Individual Lasagna Neapolitan with homemade tiny Meatballs and Pasta, Homemade Gnocchi Alfredo with Mushrooms, and Broccolini with Brown Butter and Roasted Garlic, Cannoli for dessert..

Things you need to know:

​• All class reservations are held with a credit card. No exceptions, sorry. You may pay cash upon arrival for the class if you do not want to use your credit card. Advise us of this decision. If you do not show up for class, your credit card will be charged the full amount. Cancellations must be received one week in advance to ensure a refund.

• A minimum of 6 students is required for each class. If the student count is less than 6, the class may be canceled 

• Most classes last 2 1/2—3 hours, but could be longer. Stay on task.

• Classes begin promptly at the indicated time. We don’t wait. There is too much to do.

• All equipment is provided for you including aprons. You will be advised if you must provide something in advance of the class. Bring baggies or containers to take your goodies home with you should there be any.

• Feel free to bring a bottle of wine to the Mediterranean Kitchen or American Regional Cooking classes. We provide bottled water only. If you contact us, we will give you wine suggestions from the region of study that will pair with your meal.

Baking & Pastry

Basic Bread Baking ….. $25
Do you like fresh bread? Understanding what makes a good loaf of bread will help you want to make bread every week. Learn about the science while enjoying the making, shaping and baking of demi baguettes. While we wait for the 1st rise, we’ll practice making fancy dinner rolls.

Danish Pastry ….. $30
Danish pastry is a variant of laminated doughs – as are puff pastry and croissants. It uses both the explosion of butter and the leavening of yeast to become light and flaky. We will make pastries in several shapes and fillings.

Ciabatta – an Italian Bread …. .$30 
Ciabatta is one of the best known Italian breads in the USA. Tonight we will make the "little slipper". You will learn how to use the couche and paddle. Learn about biga and why it is important. But best of all - you'll go home with warm ciabatta.

New York Style Bagels…. $30
We all love Bagels and Cream Cheese, or that great Panera Hazelnut Spread. But you can make your own for half as much. Takes a little time but they freeze well for future use. We will make cinnamon raisin, Sesame and Everything Bagels.

Whole Grain Breads ….. $30
Most bread is not truly 100% whole grains, but I have a few breads for us to try. We will use an ancient grain to make Organic Spelt Rounds and an Italian Rosemary Bread that is a mixture of many, many grains plus EVOO and honey.

Gluten Free Breads….. $35  
Bread is a staple of our lives - morning toast, sandwiches, dinner rolls and more. Gluten Free breads can fill that need for those who can't tolerate gluten well. We'll make White Sandwich Bread and a more Hearty Multigrain. This is a shared use kitchen.

Sour Dough Breads ..... $30
Learn about the sour dough starter. We will make both White and 40% Whole Wheat Sour Dough Rounds. You will make your own starter to take home and keep alive for your future homemade breads and rolls.

Kids  Classes!

We have expanded our kids' classes because our kids are growing up! Rules still apply though. These classes are for kiddos 6 - 12 years with an adult.

Fun Pupcakes ….. $20 
Ages 10-12 with an adult
We will make a variety of puppy dogs to enhance our piping skills. Just a fun thing to do in early Spring.

Little Bunny Easter Cookie Decorating ..... $20
6-10 years with an adult
We will decorate pre-baked cookies with simple techniques to develop decorating skills for the crafty child. Plenty of cookies to go home - so bring containers.

Middle Bunny Easter Cookie Decorating ..... $20
​Ages 10-12 years
In this class, we will decorate pre-baked sugar cookies. We will be working on our Royal Icing techniques: outlining, color flow, flocking and color blocking. You'll have plenty of beautiful cookies to share with everyone.

Homemade Pasta with Meatballs and Marinara Sauce, Salad and Balsamic Vinaigrette. For dessert we'll make CHocolate Cupcakes with Cherry Frosting.

Decorating with Fondant ..... $25
Learn basic techniques for decorating a pre-baked 8" cake with Fondant. We'll learn about dividing cake layers, proper filling techniques, crumb coating, rolling large pieces of fondant, and how to decorate using it.

Pizza! Pizza! Pizza! ..... $25
Benvenuto! It's our Pizza Class! In this class we'll make Pizza Sauce; letting it simmer while we work. We'll make 2 kinds of pizza dough - thick pan and thin tray. We'll prepare plenty of toppings, and bake on hot stones, using a peel to get the dough in and out of the oven. Then we dig in.
