The Mediterranean Kitchen classes have always been a staple with us, but we have started to offer classes from other areas in Europe – France, Italy and Greece, plus Mexico and the Mediterranean. Classic cooking techniques are the backbone of European cuisine.

Crème Brulee ….. $30
This custard technique ends with a butane torch! Everybody loves that part, but the purpose of this class is to get that creamy, silky smooth texture of a great custard.

Italian Butter Cream ….. $30
Silky in texture, less sweet than American buttercream, pipes like a dream. It’s a combo of a cooked syrup, meringue and butter. Delightful!

Things you need to know:
• All class reservations are held with a credit card. No exceptions, sorry. You may pay cash upon arrival for the class if you do not want to use your credit card. Advise us of this decision. If you do not show up for class, your credit card will be charged the full amount. Cancellations must be received one week in advance to ensure a refund.
• A minimum of 6 students is required for each class. If the student count is less than 6, the class may be canceled
• Most classes last 2 1/2—3 hours, but could be longer. Stay on task.
• Classes begin promptly at the indicated time. We don’t wait. There is too much to do.

• All equipment is provided for you including aprons. You will be advised if you must provide something in advance of the class. Bring baggies or containers to take your goodies home with you should there be any.

Mardi Gras King Cakes...... $30
A Mardi Gras tradition. Served on the Day before Ash Wednesday, it was a luscious treat before the fasting began. It is a type of yeast cake, sorta like a Swedish Tea Ring or an Italian Panettone. But unique in it's colors and hidden treasures. I'll provide the beads (no lifting of shirts please), and other Mardi Gras goodies. Just $30. Bring a container and allow 3-3 12/ hours as it is a yeast cake and it needs time to rise.

Do you like fresh bread? Understanding what makes a good loaf of bread will help you want to make bread every week. Learn about the science of bread baking, while enjoying the making, shaping and baking of demi baguettes. While we wait for the 1st rise, we’ll practice making fancy dinner rolls to fill the time.

Gluten Free Baking
(We are using gluten free ingredients for our classes, but we are in a shared kitchen. Care will be taken to use dedicated equipment. But we can not guarantee there isn’t ambient flour in the air. Heads up!)

Bread is a staple in our lives, - morning toast, sandwiches, dinner rolls and more. Gluten free bread can fill that need for those who can’t tolerate gluten well. We’ll make White Sandwich bread and a more hearty Multigrain.

In this class, we will decorate pre-baked 8” Yellow Cakes, using Buttercream, Colored Fondant and Candy. Skills learned are crumb coating, making buttercream, coloring fondant, and shaping fondant. You’ll have a lovely cake to take home. Bring a cake container.

Benvenuto! It’s our pizza class! In this class we’ll make Pizza sauce; letting it simmer while we work. We’ll make 2 kinds of pizza dough – thick pan and thin tray. We’ll prepare plenty of toppings, and bake on hot stones, using a peel to get the dough in and out of the oven.
