Things you need to know:

​• All class reservations are held with a credit card. No exceptions, sorry. You may pay cash upon arrival for the class if you do not want to use your credit card. Advise us of this decision. If you do not show up for class, your credit card will be charged the full amount. Cancellations must be received one week in advance to ensure a refund.

• A minimum of 6 students is required for each class. If the student count is less than 6, the class may be canceled 

• Most classes last 2 1/2—3 hours, but could be longer. Stay on task.

• Classes begin promptly at the indicated time. We don’t wait. There is too much to do.

• All equipment is provided for you including aprons. You will be advised if you must provide something in advance of the class. Bring baggies or containers to take your goodies home with you should there be any.

• Feel free to bring a bottle of wine to the Mediterranean Kitchen or American Regional Cooking classes. We provide bottled water only. If you contact us, we will give you wine suggestions from the region of study that will pair with your meal.

Shrimp Scampi and Linguini ….. $50
Who can resist Shrimp Scampi in a luxurious Buttery Garlic and White Wine sauce? Add some roasted Red Pepper and serve over homemade Linguini. We’ll have a nice salad. Linguini originates in Liguria, so we chose a regional dessert – Cappello – a pastry that looks like an individual chubby pie!

This is a very special meal that you prepare together.
Beef Tenderloin stuffed with Mushroom Duxelles and Prosciutto, then wrapped in Puff Pastry. Baked to perfection and served with a Red Wine Reduction. Duchess Potatoes, and Asparagus Spears in Brown Butter. Salad, Love knot dinner rolls. Dessert – White Chocolate Cheesecake with Raspberry Coulee - made in house for you.

Tender Stuffed Veal with Lemon and Sage Butter Cream Sauce ….. $55
A tender Veal stuffed with Prosciutto, Parmigiano Cheese, and Fresh Sage, then finished with a lovely cream sauce. We will make Linguini with an Asparagus Cream Pesto and pair it with Pan-seared Asparagus with garlic Brown Butter. We will make a nice Spring Salad of Mixed Greens, snap peas, shaved carrot and drizzled with an Apricot Vinaigrette and crusty Italian Bread. Dessert – Torta Paradiso, a vanilla cake with a sweet whipped cream filing

Pan-Seared Tuscan Steak with a Blue Cheese and Garlic Compound Butter

Yummy Steak, pan-seared to seal in the juices, and finished with a blue cheese and garlic compound butter. Also Oven-roasted Tuscan Potatoes, Grilled Balsamic Marinated Vegetables, and a Tuscan Spring Herb Salad. Dessert – Zuccotto - A Tuscan Ice Cream filled Cake.

Paella from Valencia, Spain ….. $50
This is by far our most popular class. You will make your own chorizo sausage, you will learn about the soccarrat (told to be an aphrodisiac by the Spanish) and see how the traditional paella pan is used. Dessert tonight is Orange Crème Caramel

Intermediate Level Cake Baking
Please allow 3-4+ hours for these classes as there are many steps to get to the finished product. We will not rush anyone. We will move at the pace of each class. Limit of 4 students per class
Havana Torte …. $40 2 SEATS LEFT
We have no idea how this torte got its name, but we are making this torte to learn about layering batters on batters – evenly! We’ll make a hard Ganache, Chocolate Buttercream and give Chocolate Cigarettes a try. Let’s call them cigars for Havana.

Spanish Vanilla Torte ….. $40 2 SEATS LEFT 
Vanilla Sponge that is moistened with Brandy Simple Syrup, encased in Apricot Jam that is then sealed with thin Marzipan, Phew! Not done yet. Now we’ll glaze your cake with a Hard Ganache. While that chills, we’ll make marzipan flowers to decorate the top of the cake.

​Gateau St Honoré ….. $40
To honor the Saint of Bakers, Saint Honoré, we will make this “cake”. With a base of Puff Pastry, we will then make Pate au Choux and fill with Diplomat cream to make Profiteroles. Next we will make caramel so that we can “glue” a ring of profiteroles to the base. Using the Diplomat Cream that we made for the profiteroles, we will fill the center and finally pipe a traditional decorative top.

Croquembouche ….. $40
We will perfect our Pate au Choux cream puffs, Caramel, Pastry Cream and Spun Sugar to construct a pastry cone 12”-15” tall. This is the Show Stopper. This is amazing. This is the star of the show.

Bread Making ….. $35
: We’ll practice making Gluten Free breads by making our own Flour Blend for a White Bread, and then comparing that to a 1-to-1 purchased Flour Blend for a Multigrain.
