Tastes of the World
The Mediterranean Kitchen classes have always been a staple with us, but we have started to offer classes from other areas in Europe – France, Italy and Greece, plus Mexico and the Mediterranean. Classic cooking techniques are the backbone of European cuisine. 

Italian Grill & Oven ….. $40 .... FULL
We are making Grilled Pizza with handmade pizza dough, sweet Italian sausage, and pizza Sauce. We will make a Neapolitan Spaghetti & Sausage Pie with Arrabiatta Sauce, Italian Green Beans with Capers and Lemon. Dessert: Neapolitan Ice Cream Cake

Techniques
Narrower focus than the Tastes of the World classes.

Pots de crème ….. $30
This is a custard technigue that involves tempering eggs. Ours will be the popular Chocolate Pots de Crème.

Soup Making ….. $30
In this class we will work on cream soup making – New England Clam Chowder , and broth soup making – Zuppa de Pasta e Fagioli. We will share a cup of soup with a nice green salad and freshly baked rolls.

Sausage Making #1 ….. $30
Here is something fun. We will make our own Hot Dogs! We will put them on freshly baked Hot Dog Buns and make German Potato Salad.

Crème Brulee ….. $30 ..... FULL
This custard technique ends with a butane torch! Everybody loves that part, but the purpose of this class is to get that creamy, silky smooth texture of a great custard.

Sponge Cake….. $30
To make a delicate, moist sponge is a challenge. We will prepare a Lemon Sponge Cake with Lemon Simple Syrup and a Lemon Drizzle Icing.

Sausage Making #2 ….. $30
Tonight we will make Spicy Italian Sausage, Handmade Pasta with spinach, mushroom and parmesan cheese sauce, and an Antipasto Salad.

Italian Butter Cream ….. $30
Silky in texture, less sweet than American buttercream, pipes like a dream. It’s a combo of a cooked syrup, meringue and butter. Delightful!

Things you need to know:

​• All class reservations are held with a credit card. No exceptions, sorry. You may pay cash upon arrival for the class if you do not want to use your credit card. Advise us of this decision. If you do not show up for class, your credit card will be charged the full amount. Cancellations must be received one week in advance to ensure a refund.

• A minimum of 6 students is required for each class. If the student count is less than 6, the class may be canceled 

• Most classes last 2 1/2—3 hours, but could be longer. Stay on task.

• Classes begin promptly at the indicated time. We don’t wait. There is too much to do.

• All equipment is provided for you including aprons. You will be advised if you must provide something in advance of the class. Bring baggies or containers to take your goodies home with you should there be any.

• Feel free to bring a bottle of wine to the Mediterranean Kitchen or American Regional Cooking classes. We provide bottled water only. If you contact us, we will give you wine suggestions from the region of study that will pair with your meal.

European Cake Series

Joconde Sponge Cake with Contrasting Sponge                                             Décor ….. $35 .... FULL 
Italian influenced. Think Mona Lisa. This is an interesting way to add a baked, stenciled decoration to your cakes. No one will know how you did it!

French, of course. An Almond sponge cake, soaked in Coffee syrup, filled with Coffee and Chocolate Buttercreams and sealed with Chocolate Glaze. Irresistible!

Austrian this time. Dense Chocolate cake, layered in Apricot Jam, and finished with dark Chocolate Glaze. An elegant dessert.

Bread Baking

Basic Bread Baking ….. $25
Do you like fresh bread? Understanding what makes a good loaf of bread will help you want to make bread every week. Learn about the science of bread baking, while enjoying the making, shaping and baking of demi baguettes. While we wait for the 1st rise, we’ll practice making fancy dinner rolls to fill the time.

Ciabatta – an Italian Bread …. .$30 ..... FULL
Ciabatta is one of the best known Italian breads in the USA. Tonight we will make the “little slipper”. You will learn how to use a couche and paddle. Learn about biga and why it is important. But best of all – you get to go home with warm ciabatta.

New York Style Bagels ….. $30
We all love bagels and cream cheese, or that great Panera Hazelnut Spread. But you can make your own for half as much. Takes a little time but they freeze well for future use. We will make Cinnamon Raisin, Sesame, and Everything Bagels. Hazelnut Cream Cheese, too!

Sour Dough Breads ….. $30 ..... FULL
Learn about sour dough starters. We will make both White and 40% Whole Wheat Sour Dough rounds. You will make your own starter to take home and keep alive for your future homemade breads and rolls.

Whole Grain Breads ….. $30 ..... FULL
 Most bread is not 100% whole grains, but I have a few breads for us to try. We will use an ancient grain to make Organic Spelt Rounds and Italian Rosemary Bread that is a mixture of many, many grains.

Brioche – Enriched Breads ….. $30 ..... FULL
Enriched breads have added tenderizers like butter, eggs and milk. Brioche is almost a dessert but it’s a yeast bread in real life.

Gluten Free Baking
(We are using gluten free ingredients for our classes, but we are in a shared kitchen. Care will be taken to use dedicated equipment. But we can not guarantee there isn’t ambient flour in the air. Heads up!)

Gluten Free Breads …. $30
Bread is a staple in our lives, - morning toast, sandwiches, dinner rolls and more. Gluten free bread can fill that need for those who can’t tolerate gluten well. We’ll make White Sandwich bread and a more hearty Multigrain.

Gluten Free Cakes ….. $30
We are making a base cake that we can add cocoa and other flavorings to when you want a change. We will make basic buttercream frosting that is also adaptable to adding flavorings.

The hardest part of gluten free pies and tarts is the crust, if you were to ask us. But we have learned a few tricks to make things better.

Al fresco! Italians know how to do this well. Garlic rubbed Grilled Steak, Tuscan Potatoes, Panzanella Salad, Grilled Balsamic glazed Vegetables. Relax with a Peach Bellini Lemonade. Grilled Peaches and Cream for dessert.

We are going to make pizza dough, a red and white sauce with a selection of toppings and make pizza on the grill. Our pizza will be accompanied by a crisp Summer Salad, Roasted Vegetables, and finish with a nice apple tart.

This is always a favorite class. Using our beautiful Valencia Paella Pan, we will make Chicken and Shrimp Paella and serve it with a wonderful Watermelon, Corn and Basil Salad. Dessert will be Wine-poached Pears.
